Crab Soup

This week at Giant Eagle, you can get a GREAT Deal on the imitation Crab meat!  We use this to make what we call “crab soup” .   I got the recipe from a Quick Cooking Magazine (part of Taste of Home) many years ago and the actual name of the recipe is “Chunky Seafood Chowder”.

***************************** Chunky Seafood Chowder Recipe*********************************

Ingredients  
1 medium onion, chopped
2 tablespoons butter
2 pints half-and-half cream
1 can (10-3/4 ounces) condensed New England clam chowder, undiluted
3 medium potatoes, peeled and cubed
1 teaspoon salt
1/4 teaspoon white pepper
1 package (8 ounces) imitation crabmeat, flaked

Directions
In a saucepan, saute onion in butter until tender. Add cream and canned chowder; bring to a boil. Stir in potatoes, salt and pepper. Reduce heat; simmer, uncovered, for 15-20 minutes or until the potatoes are tender. Stir in crab and heat through.

My Variations to this Recipe:
1 medium onion, chopped
2 tablespoons butter (sometimes)
2 pints half-and-half cream (I use whole milk but half & half does taste better)
1 can condensed New England clam chowder, undiluted (I like Campbell’s Chunky)
3 medium potatoes, peeled and cubed – I only use 1 potato, the chunky soup has some in there plus my hubby always leaves potatoes in his bowl.
1 teaspoon salt (i just pour some in)
1/4 teaspoon white pepper (I never have white pepper so I just use black)
1 package (8 ounces) imitation crabmeat, flaked

This recipe is so quick and easy, especially if you don’t add the onion.  It’s kinda just like jazzing up a can of soup!

    Thanks for sharing this- we’re always looking for fast meals here, and this sounds really good. Besides, jazzing up a can of soup counts as a homemade meal, right? ;)
